Using the variables require some work, but you have the tools to do so.
IE the e-mail address will come as "fred barnes" , so
all you need to extract the actual e-mail address in a "String between two
strings" where you extract the information between the " and the ".
The same for your CR problem. Just filter the last CR with a "String left
until" cell.
MSCS does not behave differently that programming in VB. In VB too you would
need to format a string to your needs before you can use it. The function
cells provided with MSCS are the same than the ones in VB. (Left$, Right$,
Mid$, etc)

We have implemented huge systems with VBS, extracting the information
wherever required. So I do not see the real problem here.
Unfortunately it is not quite clear what your script does, but I guess it is
some sort of forwarding. One recommendation we could give you is to leave
the message as file and then use the "Send Message" to send the filename of
the saved file, not actually the text. MSCS will then read back the file
before sending it.
