1) Format->Text only
2) As you can not control the amount of text people will send you, you need to use a "String right chars" cell to limit the amount of text to be send via SMS to 160 characters. You may also refine the script to check for the presence of the "This is a multi-part message in MIME format." tag in the E-Mail message and if it exists only start to forward the message from this tag on.
